Treats


Egg Crispy Treats Squares 馬仔

Recently, I fall in love with this traditional snacks.  If I translate its Chinese name literally, this is called "Little Horse".  This snack is made up of eggs, sugar, cake flour.  Mix them up and then cut into slices.  Fry the noodle-like slices.  Press onto the bottom of pan.  This is quite similar to Rice Krispies Treats Squares.  To make it easier to understand, I would say it as Egg Crispy Treats Squares, although the texture is completely different.

There are not many cake shops selling the Treats now in Hong Kong as the baking procedures are complicated and time-consuming.  You can find them in supermarkets but they are made from machine.  The texture is rigid, not soft enough as handmade.  The best Egg Crispy Treats Squares is that egg and sugar dominate the overall taste with the frying slices are just cripsy enough after sticking with honey.

Drinks in Hong Kong


I really love Hot Yun Yeung (mixed coffee & tea).
But sadly, this cup doesn't look good.  You can see from its colour.  Coffee:Milk:Tea ratio is not right... Yea... and the tea man puts so much sugar..  What is your ratio? Any suggestion?

Hot Yun Yeung is a mixture of coffee and milk tea, which is commonly found in Hong Kong tea houses and Dai Pai Dong.  In general, the ratio of coffee and milk tea is 30% to 70%.

Hot drink in Hong Kong - 熱煙央


This is my most favorite drink of my life.  Hot Yun Yeung 熱鴛鴦(熱煙央).

This is a mixture of coffee and milk tea. The tea lady and tea man who make this drink plays a key role here.  The timing and the power at the pouring mixing juncture determines the taste and smoothness of Yun Yeung.

Food for beer drinkers and gatherings

Fried Squids with Spiced Salt 椒鹽鮮魷

This dish is very popular among the beer drinkers and gatherings.  It is virtually a must-ordered dish when you have beer or wine or any alcohol surrounds you.  When you come to Hong Kong, you will never miss it in restaurants, Dai Pai Dong and tea houses.

Squids are first spread with a thin layer of Cantonese Cornflour and then seasoned with special spiced salt and sugar.  Get them fried.  Crispy and yummy squids are ready on table!  No one can help themselves not drinking one mouthful of beer after every bite of it.

The focus on this dish is spiced salt, which is specially seasoned.  It is tricky because it determines the fate of the fried squids.  Also, you need to know very clearly on the age of your wok and the power of your gas.  This affects the temperature of your wok.  If your wok can't conduct heat effectively, the fried squids will become soggy.

Dried scallop in important events


Braised Vegetable Marrow stuffed with Conpoy 玉環瑤柱脯

The Chinese name of this dish is simple and beautiful while the English translation is pretty long and does not fully bring out the elegance of the essence.  We usually eat this in important events, such us wedding banquet. Why? It contains Conpoy! Of course, Cantonese Conpoy.

Conpoy is a dried scallop.  Its smell and taste are rich. It has strong and distinctive flavour  The price is not low as well.

The bottom layer is Lettuce.  It acts as a decorative layer but it fully absorbs the taste of Conpoy and vegetable marrow! Together with the braised sauce, although Lettuce is a supporting-role here, this layer is the most exciting part you should never miss.

Steamed rice


Chinese Sausage Steamed Rice in a Wrapped Lotus Leaf 荷香臘味飯

Thin-cut sausage brings out the blended taste of sweet and salty, which is perfectly soaked in to the steamed rice. Lotus leaf is permeable enough to exhaust the correct amount of steam but trapping adequate humidity for the steamed rice.

Roasted Chicken


Young Ginger Roasted Chicken 脆皮子薑雞

Young ginger is juicy and sweet. The chicken is nicely roasted so that the texture is soft but not rough. The outer layer is crispy too.

Fried shrimps

Golden Shrimp 黃金蝦

This is Golden shrimp. Why is it described as golden? There is no gold at all.
The topping is egg yolk. It is orange-yellow. To make it fortunate and prosperous, gold is the best choice of word.
