Braised Vegetable Marrow stuffed with Conpoy 玉環瑤柱脯
The Chinese name of this dish is simple and beautiful while the English translation is pretty long and does not fully bring out the elegance of the essence. We usually eat this in important events, such us wedding banquet. Why? It contains Conpoy! Of course, Cantonese Conpoy.
Conpoy is a dried scallop. Its smell and taste are rich. It has strong and distinctive flavour The price is not low as well.
The bottom layer is Lettuce. It acts as a decorative layer but it fully absorbs the taste of Conpoy and vegetable marrow! Together with the braised sauce, although Lettuce is a supporting-role here, this layer is the most exciting part you should never miss.
